Chorizo Casserole


Chorizo Casserole ~ Tera Sheppard

1/2 lb chorizo (not spanish style)

1 small onion chopped

2 garlic cloves

2 small tomatoes chopped (roma or plum)

2 celery ribs chopped

1 potato diced

1/2 pepper chopped

3/4 uncooked rice

1 TB chili powder

1/2 t cumin

1 3/4 c beef or chicken stock

1/2c raisins or currents

1/2 chopped peanuts (optional)

2 TB chopped cilantro





In a large oven proof skillet brown chorizo. 

Pour off excess fat

Add veggies and cook till slightly tender

Add rice, raisins, chili powder, and cumin cook 5 more minutes stirring.

Pour in stock, cover and bake 45-50 mins until rice is tender.

Remove and garnish with cilantro and peanuts.
