Mediterranean Penne with Chicken


Mediterranean Penne with Chicken  ~ Tiffany Neil



3 tbsp. olive oil

2 lg onions (red & white)

1 green or red pepper

1/2 tsp oregano

1/2 tsp basil

2 garlic cloves

2 tbsp capers

1 lb cubed chicken

1 lb penne pasta

2 oz melted butter

1/2 cup black olives

4 oz feta cheese crumbled

1/4 cup fresh chopped parsley



Heat oil and saute onions a peppers.

Add chicken and spices and cook 10 minutes.

Add salt & pepper.

Cook pasta, then add butter and all ingredients.

Sprinkle with parsley and serve with bread.
