Christmas Morning Casserole

   served every Christmas morning since 1984

8 slices bread, cubed

1 lb. cheddar cheese, shredded

2 lb. brown & serve link sausage, cut

8 eggs

1-1/4 cup milk

3/4 tsp. mustard, dry or regular

1 lb. mushrooms, sliced

1 can Cream of Mushroom soup

salt and pepper to taste



Layer bread cubes and cheese in casserole.  Fry, drain and cut sausage in bite size pieces - arrange on top of bread/cheese.  Beat eggs, stir in milk, mustard and salt and pepper - pour over sausage.  Let stand in refrigerator overnight.  Just before baking spread undiluted mushroom soup over casserole; then arrange mushrooms on top. 

Bake 1 hour at 350 degrees.  Casserole is done when knife inserted in center comes out clean.  Let set 10 minutes before cutting into squares. 

Serve with juice, fresh fruit salad and croissants. 

Serves 8-12
