Rhubarb Pie


Rhubarb Pie

3+ c. rhubarb, cut in pieces
2T. flour
2 eggs beaten
1 c. sugar
1/8 tsp salt

Mix sugar, flour, salt and eggs in large bowl.  Add
rhubarbnand stir until coated.
  Pour into pastry lined pan and
top with pastry or favorite fruit crisp topping. 

Bake at 425 for the first 15 minutes.
  Reduce to 350 for the remaining 45
minutes.
